DK:  David, it's a pleasure to chat. We first met at the Portland (Oregon) Raw Food Expo in June, 2000. You came around to my booth carrying your portfolio of amazing prints, presenting me with the difficult yet fun dilemma of which one to take home. "Small Winter Waterfall" was my choice and I have savored the piece and our friendship ever since.

DS: I remember well. At the time, I was such a "green" artist. I only began painting in July of 1999.

DK: What a surprise—this is news to me! I saw an enormous portfolio of amazing fine art, the likes of which I hadn't seen before. I was drawn in by the beautiful impressionistic splendor and was hooked immediately. Since then I have heard that you have attended several raw food expos to connect with other raw fooders and offer your artistry. Please tell us about your travels and exhibitions.

Esturay ImpressionDS:Most of my early "exhibitions" were grassroots affairs, and were often rawfood-associated. I was regularly summering at an off-grid homestead in the woods near Crater Lake, Oregon, and I'd visit local towns and show my paintings at local events or regional rawfood festivals. My presentations were pretty unprofessional back then, but enough recognition—like yours—came my way to encourage me. Occasionally, I'd sell an original piece or two, but mostly I'd sell my prints. I was still primarily a working craftsman, dreaming of being an artist. After a few years of gaining ground that way, I went "professional." Since then, by the grace of God,  I've been "lucky," and I've experienced increasing recognition and financial success.

Escaping The Dietary Pleasure Trap:
Why eating healthfully is so difficult

Alan GoldhamerToday, most people acknowledge that drugs, including nicotine, alcohol, caffeine and cocaine, are addictive.  It is common knowledge that repeated use of these substances can result in physical addiction, and that the consequences can be devastating. Escaping this pleasure trap can be extremely difficult. Even the most effective treatment programs fail miserably for the vast majority of addicts. For example, the most effective treatment programs for alcoholism often involve a period of intensive in-patient care for 30 days, followed by out-patient support involving 90 visits in 90 days to a 12-step program. Of the highly motivated addicts who complete the program, over 70% fail.  

Of course, unlike drugs, food is essential for life.  Some foods, particularly those that are highly processed and stimulating, elicit responses similar to addiction. Not all individuals experience this, and those who do may not respond in exactly the same way.

The dietary pleasure trap is often hidden and extremely difficult to escape. The most common result is obesity. The medical management of obesity has a lower cure rate than the treatment of most cancers, and recidivism exceeds 90% in most studies.  

Later, all are treated to a sumptuous live raw food buffet. The fresh dishes are quite imaginative: organic garden salads galore and tasty dips, nicely complemented by exotic fruit entrees. Among the sumptuous offerings are white and chocolate sapotes, three varieties of cherimoyas, plus Mexican and Brazilian guavas, all recently gathered from Barry's orchard. Thai coconut milk and raw food desserts garnished with nasturtium flowers round out the repast.

Keeping it Cool:
Seven Fruitful Recipes for Summertime Refreshment

Peach and Mango SmoothiePineapple Peach Mango Smoothie - Serves 1

Smooth golden deliciousness.

2-4 perfectly ripe peaches, pitted (remove the skin if you prefer)
1 perfectly ripe mango,
de-seeded and peeled
1 cup frozen pineapple
ice and/or water to your liking

Blend. Eat outside in the sunshine.

PuddingSweet Cinnamon Pudding
Serves 1 or 2

Delight in guilt-free decadence!

2 fresh bananas
4 frozen bananas, chopped
1/2 tsp. cinnamon
2-3 medjool dates

Blend mixture together, using a food processor or a high powered blender, adding water if necessary to taste. Serve immediately.

A Most Misunderstood Fruit

The papaya is one of those fruits that seem to elicit strong feelings. Some folks love it, and eat it daily when possible, while others hate it, avoiding this soft orange fruit totally. Some people say that the papaya can right all that is wrong with you, while others say it is just a nasty weed. What gives, and why the big fuss?

PapayaPapaya grows well and almost anywhere in climates that are sufficiently warm. Its seeds are spread by the wide variety of birds that consume the flesh—this means that you will find papaya growing in almost every subtropical and tropical environment on Earth. The fruit will flourish in both wet and dry climates, and in poor or excellent soil. A fast grower, the plant will often begin fruiting less than a year after the initial sprouting of the seed, and, under ideal conditions, it is possible to pick fruit during the first year. In fact, papaya plants aren't typically long-lived—two years would be a long life. The fruiting of the plants is fast and furious; it is not uncommon to pick one papaya per day from a plant that is in full bloom.

My Path To Health & Peace

Jerry RyanI grew up in a supportive and caring family in the American midwest. My brothers and sister and I were given every chance to enjoy life's unfolding opportunities. As a child, I suffered no serious or long-term health conditions and had regular access to an abundance of "good nourishing food".

Yet, if I knew what I know now and could go back in time, I would have lived a lifestyle promoting more health and vitality. Looking back, I realize now how many families and individuals, sincerely seeking the best, are manipulated through economics, emotions and misinformation into ignorance about true health and its causes. I realize now that while I didn't suffer any serious maladies, as some of my peers did, my health was still not the best. Rather, it hovered somewhere between health and dis-ease, as evidenced at the very least by numerous dental caries and progressive blurring of vision.

What is true health? What would we be like if we lived our whole lives, not only from conception, but from generations back, in accordance with nature's pristine laws? This question has lately been on my mind. But let's step back a bit.

Food for the Heart –
Eating For The Contemplative Life

Salad Our eating practice must be alive to the present moment—the environment, our body and, especially, our mind and how it perceives what’s going on. This requires a high degree of honesty and a full measure of wise attention.

There are limits on how much food our bodies can use at one time. Understanding these limitations shows us how to live peacefully and wisely. The key element in this eating practice is simplicity, which requires self-restraint and discipline.

Generally, people don’t like those words—they go against the grain of sensual desire and don’t sound like fun. If you stop for a moment, and reflect upon all the health and nutrition information that’s daily pumped out in new books, on the Internet, on TV and in magazines, it seems practically endless.

Estuary ImpressionWe’re presumptuous enough to think we know more and know better nowadays, and yet most people I meet are more confused than ever before. There are just too many diets, too many superfoods, too many choices. Simply, too much of everything!

It’s a blessing when we come to understand the how-and-why of simple eating, living happily and contentedly within those limitations, free from the tyranny of endless desires. This is why there’s a need for self-discipline. It’s about learning to let go of habits, of what we think we need, and understanding how our food desires are constantly being conditioned and reconditioned, not by choice or free will, but by unconscious influences which distort our instincts—we are asleep at the table!

How Does Food Affect Consciousness?
Is Your Food a Drug or an Elixir of the Spirit?

Marilyn GordonYou no doubt know people who struggle with making dietary changes—or maybe you, yourself, have found at one time or another that breaking up with a food or substance is very hard to do. Food affects consciousness in very powerful ways, and you have to be mentally prepared to take a step forward by shifting from one way of eating to another. We came to this earth to learn many things, to overcome all kinds of obstacles and to move forward. Food is an arena in which this evolutionary pattern is being played out in a spectacular panoramic way.

Food affects consciousness, and some people are not ready to move along. It can be so hard for a six-pack and Nachos person to shift to papayas and mangos, as both the tastes and the effect on consciousness are so different, and some might feel like they're falling off the edge of the earth. They then hurry back to the familiarity of their comfortable diets and the familiar consciousness of the “couch potato” or the strong earth-bound man or woman. Now this is not to imply that there is anything wrong with that. In truth, “it is what it is.” We can put aside value judgments so that we’re compassionate enough to see the “perfection” in it all.

Leadership Listening

Lee GlicksteinWe have recently elected a President whose most striking leadership quality appears to be the capacity to listen from a place of independent solitude during times of crisis.

When I picture him coming up to  a moment of truth when he makes his choice in a critical decision, which path to take, whether or not to push a button or make a declaration or commitment, I can easily imagine him breathing and listening in expanded neutrality even in the face of a whirlwind of details and opinions.

In these moments of chaos, the enlightened leader drops into  a deep stillness in the eye of the storm, into an egoless state of no agenda and often, at first, no clue. A capacity for this expanded state of listening is critical for clear thinking and effective decision-making, and is rarely found at any level of leadership—whether it be leading a family or a nation.

The capacity for expanded listening is of course also crucial in leading one's own life. How do we maintain perspective and stillness in the eye of the storm while chaos swirls around us and, often, within us?

Infiltrating The Cooked Food Community: How to Get Mr. Jones Eating More Raw Food

Those of us who've been around the healthfood block a few times have had many discussions about vegetarianism or environmental responsibility. Let us remember that most of the population has not yet engaged in such exchanges, or otherwise encountered or integrated this life-changing information.

We may not be able to win them all over to our side, but as pioneers in the name of health and defenders of the planet's resources, I believe we have a certain responsibility to do what we can to get Mr. Jones to take a bite out of a cucumber!

From Jail to Kale:
My Transformation to Natural

Gina SilvestriMy childhood dinner table centered around a big bowl of greens, our family ate no processed foods, and I have no memories of eating at McDonald's—but strange things happen when we leave the nest, especially in America.

A sensitive child, I always wanted to help people and I felt driven to understand people who committed antisocial acts, especially those labeled "criminal." So, off I went to complete a degree in psycho-social criminology. In 2002 I was hired as a probation and parole officer in Canada, where officers are armed with rehabilitative counseling techniques instead of guns. The next six years found me in and out of jails, interviewing gangsters and violent murderers, overworked by impossible government caseload numbers...until ultimately, my true self went into hiding.

At university I had vibrant friends and regularly spent time in nature. In my new life, oversleeping, overeating and watching too much television soon took over; I was in my own personal prison of toxicity, trying to cope with career stress and the medical diagnoses that grew with it: asthma, allergies, low blood pressure, chronic depression, anxiety, near morbid obesity, fatty liver disease, post-traumatic stress disorder, severe motion sickness, high cholesterol, bouts of impetigo, chronic ovarian pain, migraine headaches, cold sores, pre-menstrual symptoms, dysmenorrhea and chronic fatigue syndrome. These were my toxic cellmates, quite literally, and they were my only friends as I shut my loved ones out. Nobody was allowed in as I got sicker and sicker...except Pepe.

From the Cement Jungle of Manhattan to the Jungles of Costa Rica–
A Transformational Journey to Simple, Natural Living

What inspired a dedicated New York City jazz trumpeter and music teacher to put her horn in its case and set up a homestead in the rugged jungles of Costa Rica? Perhaps it was the chain-reaction of events after I decided, feeling unwell one evening after eating typical restaurant fare during a gig, that I would switch to a healthy simple diet of foods from nature in their unprocessed and uncooked state. I had read a few articles on living foods and attended a local raw food support group. I felt deep within that this was my path, and I haven't looked back since.

As my body began to cleanse and purify, so did my thoughts. I soon began to max out my New York City library card on books about spirituality, nature, permaculture, gardening, etc. I began the practice of sun-gazing at sunrise or sunset with bare feet on the earth, and looked deep into a light I hadn't seen before. I then took a natural vision course and let go of twenty-five years of corrective lenses by “embracing the blur” and allowing my natural vision to determine what I did and didn't need to see.

The Human Energy Scheme

SunstarEnergy is scientifically defined as the property or characteristic of matter which gives a physical system the capacity to function or change its condition. In regard to the human body—a living biological system—our biochemical processes, signaled by hormones, catalyzed by enzymes and fueled by the energy contained in the raw materials we consume, carry out our physiological functions, including the production of new forms of energy, in a magnificent symphony conducted by our brain.

Each of the trillions of cells in the body maintain a tiny electrical charge, functioning as a miniature electrical battery cell which produces the electrical current which drives our nerve impulses, stimulating the cells to perform their various specialized functions and enabling our muscles to move as directed by the brain. This current is the result of differing concentrations of sodium and potassium ions on either side of the cell membranes creating an electrical potential difference (or gradient) called a "membrane potential." Electrolytes—charged mineral elements in an aqueous solution—are required for setting up and maintaining the membrane potential. As such, our energy system is bioelectrical (or biochemical) in nature.

Each of us has experienced renewed vitality after a sound night’s sleep. Where does the increase in physical and mental energy come from?

All physiological and physical activities consume our supply of cellular energy. It is generated at all times; yet, only when we are resting and sleeping does it build up faster than it is consumed. As such, this most precious commodity must be wisely preserved and maintained at a level which enables vigorous vitality in our daily activities. That means, when we are tired we need to close our eyes.
